Free Range Culinary Institute

The Free Range Culinary Institute is where it all began with WildCheff.

After harvesting his first game animal, Denny was faced with the frustration that many others experienced – no resource existed to gain knowledge on proper ways to cook game.

This compelled Denny to take a journey with the culinary side of game. He tested game to its limits, learned what worked well and what didn’t, applied flavor profiles to it, and eventually developed what was to be a best practice approach for cooking all types of game.

Being one to not hold what he discovered to himself, he offered his knowledge to local hunters and game enthusiasts. There was so much interest that Denny felt that he had a mission to accomplish to Educate and Inspire people who needed or desired this knowledge – hence, the Free Range Culinary Institute was born and launched in 1995.

The thought was to provide an “outside the box” educational experience for others through the means of a mobile cooking school. This way – no matter where people desired the knowledge, Denny could travel to where they are and provide them with what they needed to help with their wild game culinary journey.

Using his namesake WildCheff, coupled with FRCI he began working with regional organizations and it then expanded nationally.

Today, three decades later, FRCI has provided seminars, clinics, demonstrations and hands-on instruction to tens of thousands of people across the country.

Additionally, Denny has worked with all major sporting organizations, regional and national Fish & Game departments and outdoor organizations, major outdoor retailers, all national organizations that represent those who bring game to plate, numerous television networks to include The Food Network, and he has interned student and graduate chefs from some of the most prestigious culinary schools in the country – Johnson & Wales, Culinary Institute of America and Le Cordon Blue.

Needless to say, Denny is a pioneer in the world of wild game culinary arts, having educated and trained tens of thousands of people over the past 30+ years.

He is often referred to as a Wild Game Evangelist, or the Emeril Lagasse of Wild Game.

FRCI offers topic specific sessions onsite or virtually for all interested organizations, and can be engaged for individual or group instruction.
