Wild Cheff Salmon BLT

This recipe pairs well with fresh sliced melon and a crisp glass of white wine or Beaujolais. you can easily substitute tuna, swordfish, steelhead, speckled trout or other types of fish.

Wild Cheff products needed for this recipe:

Ingredients

  • 4 of 4 oz. wild salmon fillets, skinned (1/4 - 1/2" thick)
  • Wild Cheff Cinnamon Chili Blend
  • 4 tbsp. of mayonnaise
  • 2-3 tbsp. of olive oil
  • 2 tbsp. of fresh basil, minced
  • 1 tbsp. of fresh squeezed lemon juice
  • 12 slices of organic bacon, cooked
  • 4 pieces of red leaf or Boston lettuce
  • 4 slices of tomato
  • 8 slices of rustic bread like Ciabatta

Instructions

  • 1. Drizzle olive oil over both sides of salmon fillets and season with desired amount of Wild Cheff Cinnamon & Chili Blend.
  • 2. Heat large skillet over medium heat and lightly coat with light olive oil.
  • 3. Place fillets in skillet and cook for approximately 2 minutes on each side, or until fish is cooked. Remove pan from heat and let rest.
  • 4. Combine mayonnaise with basil and lemon juice and mix thoroughly.
  • 5. Spread evenly on both pieces of toasted bread.
  • 6. To build sandwiches place one fillet of salmon and then layer with lettuce, tomato and bacon. Slice in half and serve with a couple of slices of either cantaloupe or honeydew melon, and a glass of chilled white wine.
