White Cheddar Chipotle Mashed Potatoes

A tastier more refined version of classic mashed potatoes.

Ingredients

  • 6 garlic cloves, roasted
  • 2 tsp. of olive oil
  • 2-1/2 lbs. of Russet potatoes, peeled and cut in a large dice
  • 1 cup of shredded white cheddar cheese
  • 4 oz. of cream cheese, room temperature
  • 1/2 tbsp. of Wild Cheff Chipotle Flakes
  • 1/4 cup of whipping cream
  • 2 tbsp. of butter

Instructions

  • 1. Roast garlic in 350-degree F oven with oil in ceramic oven-proof dish for 20-25 minutes.
  • 2. Peel garlic and chop.
  • 3. Meanwhile, boil potatoes until tender, about 20 minutes. Drain, return to pot.
  • 4. Add garlic plus the remaining ingredients, and mash. Add salt and pepper to taste.
