Tuscan Sausage Stuffed Mushrooms

A delicious recipe for stuffed mushrooms.

Ingredients

  • 1/2 lb. of ground venison (any variety)
  • 4 thin slices of Italian prosciutto, roughly diced
  • 1/2 tbsp. of Wild Cheff Tuscan Sausage Spice Blend
  • 1/2 tsp. of paprika
  • 12-16 stuffing mushrooms (4 full-size portabellas can be substituted)
  • 1 oz. sun-dried tomatoes, sliced
  • 2 cloves of fresh minced garlic
  • 1 tbsp. of shredded Parmesan cheese
  • 1 tbsp. of bread crumbs
  • 2-3 tbsp. of olive oil
  • Salt and Wild Cheff Black Pepper, to taste

Instructions

  • 1. Preheat oven to 375-400 degrees F.
  • 2. In a mixing bowl, combine ground venison and spices together until incorporated evenly. Refrigerate for 1-4 hours.
  • 3. Place olive oil into a medium sized non-stick saute pan and heat up pan on medium-high heat.
  • 4. When pan is heated up, add sausage mixture, prosciutto and sun-dried tomatoes and cook until 2/3 done.
  • 5. Add minced garlic and saute for 1-2 minutes longer while stirring.
  • 6. Remove from stove and let cool.
  • 7. Add breadcrumbs and Parmesan to mixture and then stuff mushroom caps.
  • 8. Drizzle olive oil into bottom of baking dish and place stuffed mushrooms into pan.
  • 9. Place pan in oven and heat until mushrooms are cooked (approx. 15 minutes).
  • 10. Remove from oven and serve.
