Smoked Duck L’Orange Salad

A tasty salad dish or serve as a first course. You could also create larger salads for a light and refreshing summer meal.

Ingredients

  • 1 breast of smoked duck breast, sliced
  • 1 small container of organic salad field greens
  • 2 – 11 oz. cans of Mandarin oranges, drained
  • 2-3 oz. of crumbled goat cheese
  • 1-2 ears of sweet corn, corn cut from the cob
  • Wild Cheff Maine Blueberry Sea Salt
  • Blood Orange Olive Vinaigrette (click here for recipe)

Instructions

  • 1. [Note: Duck can be sliced, or sliced and then cut into strips for this recipe.]
  • 2. Clean the field greens and dry off with paper towel.
  • 3. Season the greens to taste with WC Blueberry Sea Salt. Drizzle the greens with a small amount of the Orange Vinaigrette. Add enough to coat, but not drown the greens. The key is to create flavored greens that accent the other flavors and not to create soggy salad greens, so be gentle, you can always add more when you eat the salad if you desire.
  • 4. Plate the greens onto salad plates and then stud the salad with other ingredients, topping the salad with the pieces of smoked duck meat.
