Provencal Potato & Apple Gratin

Instructions

  • 1. Preheat oven to 350-degrees F.
  • 2. Brush a casserole dish with olive oil or butter.
  • 3. Peel the potatoes into 1/8" slices.
  • 4. Peel and core apples, then slice them into thin slices.
  • 5. Peel onion, then cut in half lengthwise and slice into 1/8" slices.
  • 6. Layer the potato, onions and apples in the casserole dish, and sprinkle lightly with Herbs de Provence adn sea salt, ending with a layer of potatoes.
  • 7. Sprinkle evenly over the top layer with the cheese, then pour the cream over the top, covering evenly. Sprinkle nutmeg and black pepper on to top to taste.
  • 8. Bake for 40-45 minutes or until golden brown.
  • 9. Remove from oven and let stand for 5 minutes.
  • 10. Serve with your favorite fish recipe.
  • 11. [Note: To prevent potatoes and apples from browning prior to baking, place in a bowl of cold water with a squeeze of lemon juice. Drain and pat dry with paper towels before assembling gratin.]
