Game Bird Sausage & Caramelized Onion Pizzas

A unique take on your everyday pizza, enhanced with game bird and onion!

Instructions

  • 1. Preheat oven to 400-degrees F.
  • 2. In a fry pan over medium heat, warm the 2 tablespoons of oil and a pat of butter.
  • 3. Add the onion, salt and pepper and cook, stirring often, until the onion is soft and caramelized, 12 15-20 minutes. Stir in the vinegar. Transfer the onion to a plate and let cool.
  • 4. Bring pan back to stove an dcoat it with olive oil and a pat of butter.
  • 5. Over medium heat, take bite size chunks of the sausage and saute them so they are browned, but not cooked through. Set aside cooked pieces on small plate until 1/2 lb. is cooked up.
  • 6. Place 1 pizza dough round on a floured pizza peel. Lightly brush the dough with olive oil.
  • 7. Spread half of the onion on the dough. Sprinkle with half of the Sagebrush Spice Blend, parsley, Chipotle flakes and mozzarella. Top with half of the sausage pieces.
  • 8. Repeat with 2nd pizza.
  • 9. Transfer the pizzas to the oven, tapping the peel lightly to release the pizza.
  • 10. Bake until the cheese has melted, the sausage is cooked through and the crust is golden, 8-10 minutes, rotating the pizza occasionally to ensure even browning.
  • 11. Transfer the pizza to a cutting board and sprinkle the pizza with Parmigiano-Reggiano cheese. Cut into slices and serve immediately.
  • 12. [Simply Game Bird Sausage: 1 lb. of ground game bird meat, 1/2 tbsp. of WC Tuscan Sausage Spice Blend, 1 tbsp. of WC Blood Orange Olive Oil. Mix all ingredients together and refrigerate for 4 hours.)
