Fresh Catch Ceviche

Ingredients

Instructions

  • 1. Chill a medium sized stainless bowl in refrigerator. Once chilled, remove from refrigerator.
  • 2. Dice up fresh fish into bite-sized cubes and place into chilled bowl.
  • 3. Squeeze fresh lime juice over fish until it is covered. Cover with plastic wrap and place into refrigerator for 2-4 hours.
  • 4. (You will notice a change take place in the fish. It should change color. If a white fish is used, it will turn opaque, indicating that the acid within the citrus cooked the fish.)
  • 5. Remove the cooked fish from the refrigerator and drain off the excess lime juice from the bowl, leaving the fish.
  • 6. Now, add all the other ingredients to the bowl and gently fold so that all the ingredients are mixed thoroughly.
  • 7. Serve the ceviche in full size or mini martini glasses for your party as a 1st course.
