Cinnamon & Chili Rubbed Woodcock Salad

Instructions

  • 1. Heat up outdoor grill to medium-high heat.
  • 2. Place semi-boneless woodcock on a plate and coat with WC Blood Orange Olive Oil on both sides and then season them up with Wild Cheff Cinnamon Chili Spice Blend. Let them rest on plate while grill heats up.
  • 3. Once the grill is hot, place seasoned woodcock onto grill and turn temperature down to medium heat. Close lid for 1-2 minutes and let heat create grill marks on first side of woodcock.
  • 4. Flip birds and cook until done. Remove and set on plate while you prepare the salad.
  • 5. [To make Salad:]
  • 6. Mix all dressing ingredients well with a whisk until it forms a vinaigrette.
  • 7. Toss greens by hand in large bowl with enough vinaigrette to lightly coat the greens (you don't want the greens too soaked as they will get mushy) and then plate the coated greens.
  • 8. Sprinkle fresh corn onto the greens, followed by cherries and then the goat cheese.
  • 9. Arrange cooked woodcock over salad and enjoy!
