The New England School of
Fish & Game - I originated this concept of creating a mobile Cooking
Academy in 1995, with the intent of helping more people, by traveling to them. For
over 15 years this has proven to be very effective for me and my clients. The Academy clinics are a fantastic way to
stimulate your sense of sight, smell and taste concerning all varieties of wild and farm-rasied game!!! These clinics are
tailored to your organization or club, Clinic participants can participate in either a two-part clinic that entails field
to table principles followed by a "live" interactive cooking demonstration, or you can choose an abbreviated version
that primarily highlights key components to effective game cooking (wild and/or farm-raised) followed by a truly engaging
cooking demonstration where participants learn about the versatility of cooking game - then sampling of creative

 In
his mission to help educate culinary schools - the WildCheff provides an "intern" opportunity for
eager Johnson & Wales culinary students, so they can gain valuable experience learning how to showcase fish and game for
celebrities.
