I love making and eating tacos!!! They are such a tasty food; coupled with fresh ingredients and side dishes, it makes for fun eating!!! You can enjoy making the following mole sauce featured in this recipe or if you are not as adventurous, find a decent jarred mole at your organic food store.

Ingredients
1 lb of organic cooked chicken, shredded 
12 small flour tortillas
2 C of homemade pica de gallo
WildCheff Tex/Mex Blend
WildCheff Blood Orange Olive Oil
1 C of mole sauce
fresh cilantro
Directions
Place shredded chicken in a bowl and drizzle blood orange olive oil to lightly coat. Season with desired amount of WildCheff Tex/Mex Blend and then gently toss so that chicken is well seasoned. If chicken is still warm, you are all set to assemble your tacos. If not, heat up seasoned chicken in a cast iron pan until warmed through, then assemble tacos.
To make the tacos take a flour tortilla and place some chicken pieces on it, then sprinkle pica de gallo, desired amount of mole sauce and then cilantro. Enjoy alone or with rice and beans.
