This soup will certainly warm you up on those chilly winter days!

Ingredients
5 Ripe plum tomatoes (about 1 lb), cored and seeds removed
1 C of sweet onion, coarsely chopped
1 Large garlic clove
1 Tbsp of WildCheff Cinnamon & Chile Rub
1/2 C of cilantro, chopped and loosely packed
5 C of organic chicken broth
2 C of shredded chicken, pheasant, grouse or quail meat
1/2 bag of organic sweet corn
Garnish: tortilla strips, diced avacado, and sour cream
Directions
Place tomatoes, onion, garlic and cilantro into a blender or food processor and mix until smooth.
In a large saucepan over medium heat, add tomato mixture and WildCheff Cinnamon & Chile Rub; stir and cook for 5 minutes. Add chicken broth, meat and corn to the saucepan. Simmer at a low simmer, uncovered for 25 minutes.
Ladle soup into bowls, and garnish with diced avacado, tortilla strips and a dollop of low-fat sour cream.   
Serves 6
