I'm often asked how do you properly season your fish
and game so that it tastes right???
A few things to remember
are that all fish and game have a unique texture and flavor reminiscent of what represents what they are. In
some cases, certain species have more of a pronounced flavor, while others have a more mild taste. There are many factors
that contribute to this, but suffice to say that chicken should taste like chicken, pheasant should taste like pheasant, venison
should resemble venison and so on; that is how we come to love certain types of foods - we relate to the taste, texture, smell
and visual appeal of what we like to eat. That is what makes us unique as individuals, no different than the types and cooking
styles of foods we most enjoy.
As we reflect on fish
and game, remember that there are different strokes for different folks. Some like to be adventurous and try the exotic, while
others are more accustomed to more of a routine taste, as it is comfortable and familiar to them.
A key consideration is that you should not feel guilty about your personal taste preferences. I compare
it to the story of Godilocks; we all love flavor, but people love it at various levels.
Think about the versatilty - how many ways you can apply some creativity to how your cook and eat what you
