Ingredients
2 T of melted butter
4 Venison loin steaks, 1/2"thick
Sagebrush
Outdoorsmen’s Blend
Juice & peel of one large fresh lemon
1 C of organic chicken broth
4
T of butter
1 C of fresh blueberries
1 tsp of WildCheff Pie Spice
Salt and pepper to taste
Directions
Melt 2 T of butter in
large skillet. Season both sides of steaks with WildCheff Sagebrush Blend and then drizzle light amount of
olive oil over both sides of steak . Place steaks into skillet and cook steaks until medium rare or just beyond (pink in the
middle) & brown on both sides. Set aside & keep warm by placing on plate and covering with foil. De-glaze skillet
w/ lemon juice, peel, & broth. Cook over medium high heat until liquid is reduced to 1/2 cup. Lower heat to med. &
add 4 tbsp. butter, berries, and seasonings. Cook for additional 2 minutes, then pour sauce over steaks & serve!!!
Wine selection: Champagne, Riesling, Sparkling Wine or Sparkling
